Chef Antunes has embarked on a course with what would logically be described as an international culinary culture. His chefs come from virtually every corner of the globe to learn a cooking style adapted from Joel’s experience in five continents. From serving-ware to foods and preparations, Antunes brings an intriguing obsession with sourcing and presentation. It is hardly a menu one would expect in Little Rock but once diners realize that they are enjoying the handiwork of a man who has devoted his life to food preparation using the finest and freshest available ingredients from tiny suppliers locally, regionally and nationally; it falls into place.
